Host a Dinner Party Without Turning On the Oven

A relaxed spread laid straight across the table, no plates required, works beautifully for Malta's warm evenings when nobody wants to stand over a hob. Here is how to put one together with a few simple pieces and whatever is already in the fridge.
Start with boards instead of a tablecloth
Skip the formal table setting altogether. A row of wooden chopping boards laid end to end down the centre of the table becomes the base for the whole meal, giving guests something to reach across and pick from rather than passing plates around. It works especially well in smaller dining rooms and apartment balconies, where a few boards take up far less room than a full set of serving dishes and still look generous once the food is piled on.

Lay down bread and something hearty to carry it
Every spread needs a starting point, and bread does that job well. A mix of textures works best: a rustic loaf, some crisp bread, a few crackers and soft wraps, all set out in a wooden crate or basket so guests can tear and share. Keep a board nearby loaded with cured meats and cheeses, arranged in loose piles rather than neat rows, so the whole thing feels unfussy and encourages people to build their own little plate as they go.

Bring colour in with fresh vegetables and fruit
Once the bread and charcuterie are down, balance things out with something fresher. Chopped vegetables and fruit look especially good arranged in small glass bowls or jars dotted between the boards, giving the table a bit of height and colour against the wood. This is also where a few warm bites earn their place, such as cheese pies, meatballs or vegetable balls, kept in small dishes so they stay contained but still within easy reach of everyone at the table.

Finish with small bites and a little light
The last additions are often the ones guests go for first: a bowl of olives, a handful of nuts, anything small enough to pick at without pausing the conversation. For the finishing touch, run a string of chain lights along the edge of the table or tuck them between the boards, which softens the whole display once the evening draws in, something worth keeping in mind for the long, warm nights typical of a Maltese summer.

A spread like this travels well from kitchen table to garden or terrace, and most of the pieces are easy to order online for delivery to homes across Malta and Gozo.
